And just for fun, I thought I would include my oh-so-popular 
"Sweet Potato Burrito" Recipe! 
These burritos are easy to make and one of my favorite things to eat. So get yourself an apron and try them out!
Recipe for Kye's Sweet Potato Burritos:

1. Preheat oven to 350 degrees. 

2. Get a skillet and saute chopped fresh garlic and red onion in butter on low-med heat.

3. While the garlic and onion are cooking, prepare and cook the sweet potato as you would for a baked potato. 1 large sweet potato makes 2 good sized burritos. It should take 2-3 minutes on each side to cook in the microwave. If you prefer to cook your potato in the oven, do so before starting this recipe. Cut the potato in half immediately after cooking to cool.

4. When garlic and onions are nicely browned, add whatever additional veggies you prefer to skillet. (I like to add:1/3 can of corn, sometimes mushrooms, freshly chopped cilantro, and a 1/2 can of black beans) Cook on low heat until beans, etc are heated through. At this time, scoop out the sweet potato from the peel and add to veggie/black bean mix. Mash the potato in the pan a bit with a spoon to help mix it in with the other ingredients. At this time, also add any spices you prefer. I typically add just salt and pepper.

5. Once all ingredients and spices have been added, sprinkle with a cheese of your choice. And let set on a low heat while you prepare the tortillas.

6. Get a cookie sheet out and lay out 2 large size tortilla wraps. I usually use white, but wheat, sun-dried tomato, etc are also good choices. 

7. Remove pan from heat and spoon contents onto each wrap evenly. 

8. Roll burritos and lay them on the cookie sheet fold side down. If you are unsure how to properly roll a burrito, refer to the back of the tortilla packaging, or click here for easy instructions/illustrations:

9. Place cookie sheet in oven and cook burritos for 10 minutes on each side (20 minutes total), or until golden brown and slightly crispy. 

10. Remove from oven, cool for 15 minutes and serve with a side or sour cream, guacamole, or whatever else you prefer. Enjoy!

Note: As I mentioned above, 1 large sweet potato, along with the veggie quantities listed above makes 2 large sized burritos. If you are cooking for a family or larger group, simply double ingredient quantities or experiment with portions until you get the desired amount of burritos needed.
