With regards to the safety concerns:

The edges of the aluminium are not sharp, as long as they are smooth with no jagged pieces. To cut yourself, you would pretty much have to deliberately press the edge against your skin and dig it in.

I saw a suggestion to crimp the edges. I have tried this and found that the metal just breaks. However, I have also seen pictures of projects where it looked like the edges were crimped, so there must be a way of doing it.

The greater safety concern is when you are trimming the edges to get rid of the jagged bits. Small pieces of metal will occasionally fly up, and I have been hit in the face a couple of times, so I wear safety glasses while trimming the cans now to protect my eyes. And if you have small children or pets, you will want to make sure none of them end up on the floor.

To minimize the amount of trimming you have to do, do not close the scissors all the way while cutting and sort of slide them along the metal, like you would if you were cutting wrapping paper.
